Shrimp salad and popovers are a terrific combination that would never have occurred to most people. The recipes appeared in a spring issue of Relish, and one of our editors thought it was the perfect combo for brunch with her in-laws.
“The shrimp could be made ahead,” said the editor, who knows the trouble any cook can run into when more than one dish has to get to the table at the same time. Her plan was to do the salad the day before and put the popovers into the oven when everyone came arrived the next day. In keeping with her goal to make everything as easy as possible, the rest of the menu was cold soup, a mixed fresh fruit compote and a bottle of wine—very doable, and exactly right for brunch, a meal that straddles breakfast and lunch.
Brunch, if you have never been a member of the English country weekend set, was what people enjoyed after the morning hunt. The word was coined by Guy Beringer, an English writer, and first appeared in a hunting magazine in the late 19th century. Eating brunch, or “brunching” as it was called, became popular in this country around the 1930 and was the in-thing with the Hollywood crowd.
Before airplanes, film stars traveling coast to coast would stop between trains at the Pump Room in Chicago for brunch. These days, brunch has become the favorite for those of us who like to sleep in on the weekends.
Tips for Perfect Popovers
• Make sure oven is thoroughly preheated.
• Grease the muffin or popover pan liberally.
• Have all ingredients at room temperature.
• Don’t overbeat the eggs.
• Fill muffin or popover cups only about halfway. If they’re too full, popovers won’t rise properly.
• Don’t open the oven door during baking.
• Invest in a popover pan. They’re deeper than muffin pans, allowing the popovers to crawl up the sides and rise higher.
1 cup all-purpose flour
1/2 teaspoon salt
1 cup 2 percent reduced-fat milk
1. Preheat oven to 450F. Grease a 6-cup muffin or popover tin.
2. Mix flour and salt together in a medium mixing bowl. Combine eggs and milk; blend well. Add to flour mixture and stirring with a whisk until blended.
3. Divide batter among prepared popover cups. Bake 15 minutes. Reduce heat to 350F and bake 20 minutes. Do not open oven door during baking process. Serve immediately. Yield: 6 popovers
Per serving: 110 calories, 2.5g fat, 5g prot. 17g carbs., 0g fiber, 240mg sodium.
For a perfect light lunch, serve this salad with the popovers. Use any combination of fresh herbs that you like.
2 pounds cooked shrimp, peeled and chopped
1 cup grape tomato halves
3/4 cup light mayonnaise
1 tablespoon Dijon mustard
1 teaspoon lemon juice
2 tablespoons chopped parsley
2 tablespoons chopped fresh dill, chives or tarragon
1. Combine all ingredients; mix gently. Serve with popovers. Serves 6.
Per serving: 290 calories, 13g fat, 38g prot., 4g carbs., 0g fiber, 720mg sodium.
